Pasta salad for ~15 servings:
Follow standard instructions on packages for: 1/2 lb of ditalini noodle & 1 cup raw red quinoa
Then chill.
Toss with:
1 cup crumbled feta
1 cup halved cherry tomatoes
2 cups chopped water cress
1/4 cup of torn basil
1/2 cup thinly sliced fennel 
dressing: 4 oz. red wine vinegar, 3 oz lemon juice, & 6 oz. extra virgin olive oil
salt & pepper to taste.
