Cody Long from Olde Town Spice Shoppe shares a recipe for Sweet Potato Salad and shows us some different ways to enjoy the sweet spud!
Sweet Potato Salad Recipe:
4 large sweet potatoes
1 cup mayonnaise or 1 cup plain yogurt
1/2 cup diced scallions (about 6)
½ cup diced red onion
1 red pepper, finely diced
2 teaspoons orange jucie
2 teaspoons apple cider vinegar
1 tbls tandoori seasoning
1 tbls basil
1 tsp paprka
½ tsp cumin
Salt & Pepper to taste
(optional: add diced celery, pine nuts, or rinsed garbanzo beans)
Peel and cube the sweet potatoes and put them in a large pot. Cover with cold water, bring to a boil and boil until just tender, about 10-15 minutes. Drain and set aside to cool.
While the potatoes are cooling, in a medium bowl, mix the mayonnaise or yogurt, with all other ingredients. Add the cooled potatoes to the mixture, and toss until the potatoes are fully coated. Add salt and pepper to taste. Best served chilled.
