Personal Chef, Mary Gutzler shares her recipe for Salmon Rolled Shrimp.
1 lb-Salmon skinned, cut in half
1 8oz-package cream cheese
8-10 large-Golf Shrimp, peeled and devained, cooked in butter just until they search lightly on each side then chop.
1/2-cup Ranch (homemade if possible)
1/2-cup Cheese Mix (cheddar, Jack or your favorite cheese will be fine)
1/2-packages bacon, chopped and cooked
Extra Virgin Olive Oil
Drizzle olive oil over the salmon and then season with salt and pepper. Set aside. Place all of the other ingredients into a bowl and mix together well. Spread a medium layer of the mixture on each Salmon then roll. Place the salmon onto a baking sheet and cook at 425 for 10-15 minutes.
The extra mixture can be used to stuff mushrooms with. You would pipe the mixture into the mushroom and then Drizzle the olive oil over the mushrooms and sprinkle with salt and pepper.
