Herb Rubbed Pork Loin Stuffed with Spinach & Ricotta

Chef Mary Gutzler from Gutzler's Butterfly Patio shares a recipe for Herb Rubbed Pork Loin Stuffed with Spinach and Ricotta. 

Ingredients: 

3-tablespoons Italian Seasoning

1-tablespoon Kosher Salt

2-tablespoon Dried Sweet Basil 

1-tablespoon Pepper

1/2-cup extra virgin olive oil

1-pound boneless pork loin

1-cup spinach 

1-cup ricotta cheese

Directions:

Preheat your oven 450.

Blend the first 5 ingredients together.  Set aside.  Put your spinach and ricotta in a bowl and mix together with your hands then set aside.  Slice the pork open rub a little of the herb seasoning in the center then place the spinach mixture in the center and spread out then fold the pork back over.  Place into a baking dish then into an oven for 45-50 minutes then temp for a reading of 155.
