Russian Beet Salad

Russian Beet Salad
1-2 beets (more if smaller)
1-2 new potatoes
1 large carrot
1 dill pickle, diced
¼ sweet onion, diced fine
olive oil
sea salt to taste
handful fresh dill, chopped
1 scallion chopped

Place potatoes and carrots in large pot and cover with water.  Bring to boil and boil them until tender.  Remove and let cool, reserving the water in the pot.  Put beets in the pot and boil until cooked (or boil in a separate pot to save time)
Once vegetables are cool, peel and dice/cube.  Place into bowl.  Add pickles & onion, drizzle with olive oil & season with salt and pepper. Mix thoroughly to combine.   Laslty, sprinkle in dill and scallions for garnish.  Refrigerate for a few hours or overnight.
