Tomato Bisque Soup

1 cup celery, chopped

1 small onion, chopped

1 carrot, grated

1/2 green pepper, chopped

1/4 cup butter

4 1/2 cups chicken broth

1- 12oz can tomatoes with juice, pureed

1/2 tsp. salt

1/4 tsp. pepper

4 tsp. sugar

1 cup half and half

6 tbs water

1/2 cup plus 2 tbs. cornstarch

Saute celery, onion, carrot, and green pepper in butter in a large stock pot.  Add chicken broth, tomatoes, salt, pepper, and sugar.  Heat to boiling.  Add half and half.  Stir and reduce heat and simmer for 20 minutes.

In a small bowl, stir together water and cornstarch until smooth.  Stir into slow boiling soup.  Let simmer for 10 minutes or until slightly thickened.

Yield:  12 Servings
