Cheesy Egg Scrambler

1/2 whole-wheat pita bread pocket
2 large egg whites or 1 large egg
1/4 cup shredded cheese (any variety)
1 slice of cheese (any variety)
Toast pita; set aside. Spray small skillet with non-stick cooking spray. Heat over medium heat 20 to 30 seconds. Scramble eggs and cheese in preheated skillet until eggs are set and cheese is melted. Fill pita pocket with eggs and cheese; serve.
Tip: Make this recipe your own by using a combination of 2 of your favorite cheeses, or by adding chopped vegetables and deli meat to the egg before scrambling.
