Chocolate Pudding Cake

Pudding cakes have been a staple as a quick, easy dessert at least since the ‘30’s.  The really neat thing about these is that you put them together, pop them in the oven and as they bake, they divide into a cake on the top and a creamy sauce on the bottom.  Serve warm by scooping out both the top and the bottom for a real taste treat.  Leftovers can be warmed in the microwave. 

1 cup flour
1 cup sugar, divided
1/2 cup cocoa, divided
2 easpoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
1/4 cup oil
1 teaspoon vanilla extract
1/2 cup brown sugar
1 cup boiling water

Preheat the oven to 350 degree.  If using a glass or dark pan, reduce the temperature by 25 degrees.  Spray a 9x9 baking pan

Combine the flour, 3/4 cup sugar, 1/4 cup cocoa, baking powder, baking soda, and salt in a large bowl.  Mix together the milk, oil and vanilla.  Add the liquid to the dry ingredients and stir together.  The batter will be thick.  Spread in the prepared pan.

Mix the brown sugar, cocoa and remaining sugar together.  Sprinkle evenly over the batter.  Pour the water over all.

Bake about 30 minutes until the cake is set around the sides and the top is bubbly.  Cool in the pan for at least 10 minutes. 

Makes about 8 servings.
