Red Cabbage Coleslaw Salad
3 cups medium head red cabbage, finely sliced or shredded
2 cups of shredded large carrots
1 cup of sliced, raw and unsalted almonds
1/4 cup finely chopped green onions (or red onion)
½ cup of fresh cilantro
1 tablespoon toasted sesame seeds??
1 tablespoon of freshly grated ginger
salt to taste
½ cup unseasoned rice vinegar?
1 tablespoon of sweetener (stevia, honey or agave nectar)
2 tablespoons of sesame oil
Finely slice or shred cabbage. Mix with all ingredients and toss. Drain any extra liquid. Prepare the dressing in its own bowl and mix. Then slowly add the dressing into the salad or serve on the side.
* The longer the salad sits in the dressing, the cabbage leaves will soften.
