Blackened Fish Tacos

Blackened Fish Tacos

Makes 6 servings

3 lbs Mahi Mahi
1/3 cup clarified butter
Cajun spice to taste
12 6-inch flour tortillas
3 cups cheddar and pepper jack cheese
3 cups iceberg lettuce, shredded
3 cups Pico de Gallo, recipe follows
1 cup Sriracha Cream, recipe follows

Heat cast iron skillet until hot.

Rub Mahi Mahi with butter and season with Cajun spice.

Place in hot skillet and cook 3-4 minutes per side.

Warm tortillas and layer with cheese, blackened fish, lettuce, Pico de Gallo and drizzle with Sriracha cream.

Pico de Gallo

3 cups ripe tomatoes, diced
1 jalapeno, minced
1/2 cup red onion, diced
1/4 cup cilantro, chopped
1/2 lime, juiced
Salt to taste

Combine all ingredients.

Sriracha Cream
3 cups sour cream
2 tablespoons Sriracha (or favorite hot sauce)
1/2 lime, juiced

Combine all ingredients.
