Sauted Italian Chicken over Spinach

Sautéed Italian Chicken over Spinach


• 5 ounces boneless skinless chicken breast
• 2 cups baby spinach
• ¼ cup sliced red onion
• ½ cup sliced domestic mushrooms
• 2 garlic cloves (minced)
• ¼ cup olive oil
• ¼ cup dry white wine
• 1 teaspoon salt
• 1 teaspoon black pepper
• ½ cup grape tomatoes

Chicken Marinade Ingredients:

• ½ cup dry white wine
• ¼ cup extra virgin olive oil
• 1 teaspoon fresh rosemary (chopped)
• 1 teaspoon mustard
• 1 garlic clove (minced)
• 1 teaspoon salt
• 1 teaspoon black pepper


Prepare marinade by mixing all marinade ingredients above and place chicken in marinade 24 hours prior to cooking.  Remove chicken and pan sauté for about 3 minutes on each side until done. 

In a separate sauté pan add olive oil and turn on medium heat.  Add onions, mushrooms, and grape tomatoes and cook for 2 minutes.  Then add garlic and spinach and cook for 1 additional minute.  When spinach is wilted down add wine, salt, and pepper. 

Serve chicken over spinach and a vegetable mix.
