Fresh Strawberries with a Balsamic Reduction
1 pint of fresh, preferably organic, strawberries, quartered
1/4 cup of balsamic reduction
A few sprigs of fresh mint
1. Serve strawberries with a drizzle of balsamic reduction.
2. Garnish with a few leaves of mint.
Balsamic Reduction (Glaze)
1-3 cups of balsamic vinegar (depending on how much you want to make; one cup will yield about 1/4 - 1/3 cup of reduction)
1. Place the vinegar in a heavy-bottomed, non-reactive pot. Heat on low, so that you have a light simmer.
2. Reduce until syrupy, or to desired consistency, about 2 to 2 1/2 hours.
*Cooking time will vary, according to the size of the pot. Surface area makes a difference.
*If vinegar is reduced too far for your use without being burnt, a little water can be added to thin it out again. The easiest way to do this is while the reduction is warmed over the stove.
