Salmon en Croute

6 4oz  pieces of salmon
½ c Dijon mustard
2 sheets puff pastry
1tsp salt
2Tbsp melted butter

Dill Cream

½ c sour cream
½ c mayonnaise
2Tbsp minced fresh dill
1tsp white vinegar
1 pinch of salt and sugar to taste


Preheat oven to 350° Place puff pastry on counter to thaw.Remove skin from salmon if necessary. Divide salmon into approximately 4ounce  portions. Coat salmon with Dijon mustard and wrap with pastry. Brush outside of wrapped salmon with melted butter. Place in oven and bake for 14 to 18 minutes or until outside begins to turn light brown.

Dill Cream
Combine all ingredients in a bowl and chill in fridge for a few hours if possible.
