Skillet Breakfast Pizzas

Fig, Caramalized Onion and Goat Cheese Skillet Pizza

1 Slice Nann Bread ( Plain or garlic flavored)
2T Olive oil
1 Small Sweet onion
3-4 oz goat cheese. ( You can use plain or flavored goat cheese)
4 small figs cut in half
1t. chopped rosemary
1/2 c. mozerella or gouda(shredded)
1. In a pan saute your onions with the olive oil unitl nice and caramel color. Set aside
2.In that same pan add a little more olive oil and place the nann bread( which will be your pizza crust) in the pan to crisp up the bottom
3. Add the goat cheese , sliced figs and caramilized onions, cheese and fresh rosemary on top of the bread. Cover with a lid so the cheese can melt and set on low heat for about 5-6 minutes or until cheese is nice and melted.
4. Take the pizza out and cut into slices. Serve with a simple baby green salad with herb vinagrette... Enjoy!
Florentine Skillet Pizza

1 slice Nann Bread( Plain or whatever flavor you like)
3 eggs plus 1 egg while
1T. whole mile.
1 c. fresh chopped spinach
2 slices turkey bacon
olive oil
1t. fresh chopped garlic
2oz gruyere cheese shreeded
1 os parmasean
Cook off the bacon first unitl nice and crispy. Crumble and set aside. Whisk the eggs plus the egg whites, milk. chopped spinach and garlic . Scramble the eggs in the same pan you used for the bacon.

In another small skillet add olive oil and place nann bread in skillet to sear the bottom. Top with scrambeld eggs, both cheeses, and crumbled bacon. Cover with a lid for 3-5 minutes or until cheese is melted. Place on plate, cut in slices and serve with a nice baby green salad. enjoy!
