Yield: 6 servings
3/4 cup golden raisins
1 cup shredded carrots
1 cup shredded green cabbage
1 cup broccoli slaw (see note)
1/3 cup India pale ale (see note)
1/3 cup coconut milk, about one 5.5-fl-ounce can
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/2 teaspoon ground cayenne pepper
1. Toss raisins, carrobts, cabbage and broccoli in a medium bowl.
2. Heat beer, coconut milk, lemon juice, salt and cayenne in a small saucepan over medium-low heat. Cook and stir until warm throughout, about 10 minutes.
3. Pour warm dressing over the slaw. Toss well. Refrigerator one hour before serving.
Note: Broccoli slaw is shredded broccoli stems; can also be purchased pre-shredded at supermarkets. Look for IPAs that are brewed with Simcoe hops, which lend a garlicky, oniony flavor that complements this slaw.
