Caramelized Bacon Wrapped Chicken with Rams Sauce
Yield: 24 skewers
24 10” skewers
1 Boneless/Skinless Chicken Breast
8 Slices of Hickory Smoked Bacon
½ cup Brown Sugar
¼-½ tsp Ground Chipotle Pepper
Preheat oven to 375 degrees. Soak skewers in water for 5 minutes.
Cut each bacon slice into thirds. Dice chicken into 1” pieces. Wrap the bacon around
the chicken pieces and skewer. Mix the ingredients for the sauce together and
divide into 2 bowls, reserving one for basting and one for a dipping sauce. Mix the
brown sugar and pepper together in a bowl. Baste the skewers with the sauce from
one bowl and press into the sugar/pepper mixture. Place on a foil lined baking
sheet with a grate. Bake for 30-35 minutes until bacon is nice and caramelized.
Serve with reserved dipping sauce.
½ cup Dijon Mustard
½ cup Crushed Pineapple
½ cup Honey
2 tsp Lite Soy Sauce
dash of Chipotle Sauce (or other hot sauce)
Mix ingredients together and serve with chicken skewers.
