Indian Spiced Chicken
1/2 cup (packed) fresh mint leaves
1/2 cup (packed) fresh cilantro
1 tablespoon fresh lemon juice
2 1/2 teaspoons minced fresh ginger
1 jalapeño chili, seeded, minced
2 tablespoons (or more) plain yogurt
1/2 cup plain yogurt
3 tablespoons tikka paste or mild curry paste (such as Patak's)
1 tablespoon olive oil
2 garlic cloves, minced
2 teaspoons minced fresh ginger
1/4 teaspoon cayenne pepper
4 4-6 ounce skinless boneless chicken breasts
Butter lettuce leaves
1/2 small English hothouse cucumber, halved lengthwise, thinly sliced crosswise
2 limes, cut into wedges
Blend first 5 ingredients and 2 tablespoons yogurt in blender or processor. Blend in more yogurt if necessary to make smooth paste. (Chutney can be made 1 day ahead. Cover and refrigerate.)
Whisk first 6 ingredients in large bowl to blend. Add chicken and toss to coat. Cover and refrigerate at least 2 hours and up to 12 hours.
Preheat broiler. Broil chicken until cooked through, turning occasionally, about 8 minutes. Arrange lettuce and cucumber on plate. Top with chicken. Squeeze lime over. Serve chicken with Cilantro-Mint Chutney.
4 cups cooked pearl couscous
2 cups Kentucky peas blanched lightly in salted water
2 cups chopped tomatoes
1/4 cup mint chiffonade
1/2 cup orange juice
1 tsp. kosher salt
1/2 tsp. coarse pepper
For the Couscous Salad: Combine the couscous with peas, tomatoes, mint, orange juice, salt and pepper in a large bowl. Mix well. Keep warm or store in refrigerator for up to 8 hours to serve cold.
Heavenly Nonfat Chocolate Honey Dip
Makes 1-1/4 cups
• 1 cup nonfat Greek Yogurt
• 1/2 cup honey
• 1/2 cup unsweetened cocoa powder
• 1 teaspoon vanilla
• Assorted fruit, for dipping
• Angel food cake chunks, for dipping
In a small bowl, combine all ingredients until well blended. Cover and chill until ready to serve.
Serving Suggestion: Serve with assorted fresh fruits (such as strawberries, pineapple chunks, kiwifruit rounds, grapes and apple wedges), assorted dried fruits (such as apricots, apples and pears), and/or with chunks of angel food cake.
