Vegetarian Chili

Vegetarian Chili:
1tbl olive oil
2 tbs chopped garlic
1 yellow onion - diced
1 red pepper - medium dice
1 green pepper - medium dice
1 yellow pepper - medium dice
1 jalapeno (or poblano) pepper - seeded and fine diced
2 cups sliced mushrooms
1 cup frozen corn
1 8 oz can diced tomatoes
1 8 oz can tomato sauce (or crushed tomatoes if you like coarser texture)
1 8 oz can chili beans
1 8 oz can black beans
1/2 tsp cayenne pepper
1 tbs chili powder
1 tsp cumin
1 tsp coriander
Salt and Pepper to taste
Cheddar cheese and sour cream to garnish (optional)

1) In a large sauce pot heat olive oil
2) Saute garlic and onions and peppers in olive oil till soft
3) Add mushrooms saute till mushrooms darken just slightly
4) Add Tomatoes, Tomato Sauce, and beans
5) Bring to a boil then reduce to a simmer
6) Add the frozen corn
7) Add seasoning and simmer for 20 minutes
8) Serve immediately or put in jars or Tupperware and freeze
This chili is also vegan friendly and gluten free if the canned products used are as well.
Top with sour cream and cheddar cheese if desired.
If it turns out too hot for you add some honey and more frozen corn to absorb the heat
If you aren't fond of spicy chili take out the jalapeno and the cayenne
If you WANT really spicy chili use both poblano and jalapeno peppers, and add a touch of hot salsa or hot sauce to the pot
