Crepes with caramelized apple

Crepes with caramelized apple

½ c. all purpose flour
½ c. milk
¼ c. water
2 large eggs
2 Tbsp unsalted butter, melted
1 ½ Tbsp sugar
Pinch of salt
Combine all ingredients in a blender until smooth. Cover and let stand for at least 30 min or up to 2 days. Stir well before cooking. Heat crepe pan over med heat, butter the pan and pour 2 Tbsp batter into the pan, lifting the pan off heat and tilting the batter form a thin layer. Cook until the top is set. Turn over using thin spatula or your fingers, cook until the underside is lightly browned. Remove crepes to wax paper, repeat until all batter is used up. Stack crepes between wax paper. Can be made ahead of time and freeze up to 1 month. Make: 12 crepes

Apple Compote
¼ c. unsalted butter
6  Granny smith apples, sliced
¾ c. sugar
1 Tbsp cinnamon
¼ tsp salt
2 Tbsp apple brandy

In a shallow saucepan heat butter over med hi heat, add apple and the rest of ingredients. Stir well, cover and cook until apples are tender, about 20 min. Use immediately or refrigerate up to a week. Make: 4 c.

Whipped Cream
1 c. Heavy whipping cream
3 Tbsp sugar
1 tsp vanilla

Beat all ingredients in a cold bowl by using a cold whisk until form soft peak. Use the same day it’s made.

Put 1/3 c. filling onto a corner of crepe, fold into 4th to form a triangle. Serve with whipped cream.
