Christmas Snowball Cookies

Christmas Snowball Cookies

Stage #1
2 1/2 ounces Ground Pecans,(Pecan Meal, Pecan flour)
4 ounces Powdered Sugar
1 ounce Regular Shortening
3 ounces butter, softened
1/16 ounce Salt
1/8 ounce B & V Flavor
3 3/4 ounces Bread Flour
5 3/4 ounces Pastry Flour
Stage #2
2 fluid ounces Whole Eggs

1. Stage #1
Scale all ingredients into bowl, mix in 1 st speed for 1 minute

2. Stage #2
Add and incorporate
Mix 1.5 minutes in 1 st speed

3. Divide into 1/2 ounce pieces. Round and deposit on a parchment lined baking pan
Note: This cookie does not spread, they can be placed close together

4. Bake in a 350 deg F. convection oven for approximately 8 minutes (Until the bottoms and edges begin to turn brown)

5. After baking allow cookies to partially cool.  While still warm roll in powdered sugar

6. Allow to thoroughly cool, and again roll (coat) whith powdered sugar
