Jambalaya Boogaloo

1 head celery(diced)
2 green peppers(diced)
2 yellow onions(minced)
2 garlic cloves
2 bay leaves
2 cups rice
4 cups chicken stock
1 can chopped tomatoes
2 pounds andouille sausage
2 breasts blackened chicken
16 shrimp, peeled and deveined
2 oz crawfish tails
1 tbs cajun seasoning
2 tbs butter
1 tsp salt
green onions for garnish


Method-
Saute vegetables in saucepot with butter until transclucent.  Add remaining ingredients, stir, and bake covered in 350 degree for 45 minutes.  Remove and serve with cornbread.
