• 8 ounces Apple Wood Smoked Bacon, cut into 1-inch pieces
• 1 Large Yellow Onion, Minced
• Sea Salt and Freshly Ground Black Pepper
• 1 Bottle Hearty Red Wine (Pinot Noir, Merlot, etc.)
• 1 Bouquet Garni (thyme, bay leaf, parsley wrapped in cheesecloth or with twine)
• 2 cloves Garlic, crushed
• 2 cups Chicken Stock
 

To thicken the sauce:
• 2 tablespoons unsalted butter
• 3 tablespoons all-purpose flour
