Chipotle Ranch Chicken Salad Wrap

Chipotle Ranch Chicken Salad Wrap – Makes 2 wraps

2 chicken breasts
Salt and pepper
¼ chipotle pepper
1 tablespoon honey
¼ cup diced red onions
¼ cup diced tomatoes
¼ cup shredded lettuce
¼ cup shredded cheddar cheese
2 tablespoons buttermilk ranch dressing
2 8" flour tortilla wraps
1) Cut raw chicken into cubes
2) In a skillet (cast iron if you have it) heat oil over medium high heat
3) Add chicken – season with salt and pepper
4) While chicken cooks take chipotle pepper and dice it up really small (be careful to wash your hands afterward)
5) Once chicken is mostly cooked add chipotle pepper to skillet (juices too)
6) Sauté  till the chicken is coated
7) Add honey – sauté till chicken is cooked through
8) Take the flour tortilla and heat it on the oven range till just slightly warm
9) On a cutting board place the tortilla wrap – pour ranch dressing in a line on the tortilla then  place the lettuce, tomato, onion and cheese on top
10) Pour hot chipotle chicken mix into wrap
11) Wrap carefully – fold sides up first then tuck in the bottom and roll up
12) Skewer with tooth picks and cut on a diagonal
