Chuy's Recipe

1 lb. Peeled and cleaned shrimp
1.5 oz roasted garlic
2 oz poblano peppers julienne
1 oz oil
1 tbl crushed chipotle with adobo sauce
juice from 1/2 a lime
2 oz. 901 silver tequila
4 fl oz chicken stock
3 tbl unsalted butter
salt and pepper to taste
heat a medium-sized skillet over medium heat. Add the oil and swirl to 
heat. Add the peppers and sauté until they soften. Add the shrimp and 
sauté quickly, add the garlic and chipotle. Remove the skillet from 
the heat and pour in the tequila, allow it to sizzle a moment and then 
return the shrimp mixture back to the heat. Remove the shrimp from the 
skillet and reserve, add the chicken stock to the skillet and reduce 
the the mixture by half. Season to taste. Add the butter and gently 
whisk around to thicken the sauce. Add the shrimp and cook a little 
more to finish thickening. Squeeze the lime over the shrimp. Serve the 
fajitas with flour tortillas, your favorite sides and a 901 silver
