Lemon Poppyseed Cake

with Variations

 Crazy is the right term for this cake with no eggs and no butter made in the pan in which it is baked.  Crazy, right?  One thing you should be aware of is the cakes without cocoa will not be browned on top as the butter and eggs contribute to the color.  If this bothers you, just flip it over where some color does occur.  I have included 2 variations to complete your crazy cake repetoire.  This old fashioned cake has everything going for it - 
light, flavor and ease. 

Lemon Poppyseed Cake
1 lemon, medium size
1 1/2 cup flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup poppy seeds
2 teaspoon lemon juice
1 teaspoon cider vinegar
1 1/2 teaspoons vanilla
1/3 cup vegetable oil
1 cup boiling water

2 tablespoons lemon juice
1/4 cup sugar

 Lightly spray the bottom of an 8x8 inch square pan.  Preheat the oven to 350 degrees.  While I normally do not like to use dark bakeware, it is perfect for this recipe to provide some color to the bottom of the layer. 

 Zest the lemon and squeeze the juice from it; set aside. 

 Sift the flour, sugar, baking powder and salt together in the prepared pan.  Add the poppyseed and lemon zest.  Mix together.  Shake pan to level.  Make 3 holes in the dry ingredients.  Put the lemon juice and vinegar in one hole, the vanilla in another an the oil in the last hole.  Pour the boiling water over all.  Stir to mix all together.  Make sure all of the ingredients are well blended.

  Bake for 25 to 30 minutes until a tester comes out clean.  There will be no color on top that is how it should be. Cool for 10 minutes.  Turn it out onto a serving plate.
Pour hot glaze evenly over cake.  Cool completely.

 Combine lemon  juice and sugar.  Bring to a boil over heat or in the microwave.
Use as described above.

Almond Crazy Cake
 Omit the poppy seeds and substitute almond extract for the vanilla in the above recipe.  Proceed as directed above.  Do not use the glaze.  Frost or glaze as desired.

Chocolate Crazy Cake
 Add 1/3 cup natural cocoa powder  - like Hersheys - not Dutch process, and use 1/2 cup vegetable oil.  Use 1 cup cold water or weak coffee.  Proceed as directed above.
