Recipe: Pan Seared Salmon with Mediterranean Relish

4 each 6 ounces salmon fillet
1 ounce olive oil blend
3 ounces cucumber, small dice
3 ounces artichoke bottoms, small dice
2 ounces roasted red bell pepper, small dice
1 ounce red onion, small dice
1 ounce kalamata olive, small dice
1 tablespoon capers
1 teaspoon garlic, minced
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon granulated sugar
1 ounce scallions, sliced thin
Salt and pepper, to taste

Method of Preparation

1.    Mix all of the vegetables in a bowl and chill for one hour before serving

2.    Season the salmon with salt and pepper, heat the oil blend in a skillet on medium high heat, then add the salmon

3.    Cook the salmon about 3 minutes on each side till golden brown and crisp, salmon should be medium

4.    Remove salmon from skillet and add relish mixture, toss in hot skillet for about one minute to take the chill off

5.    Spoon relish over the salmon and serve

Lemon Rice

1 cup uncooked rice
1 teaspoon butter
1 clove garlic, minced
1 teaspoon grated lemon peel
1/8 teaspoon ground black pepper, or to taste
2 cups chicken broth
2 tablespoons chopped fresh parsley
1 ounce lemon juice

Method of Preparation

Combine rice, butter, garlic, lemon peel, pepper and broth in a 2- to 3-quart saucepan. Bring to a boil; stir once or twice. Reduce heat; cover and simmer 15 minutes or until rice is tender and liquid is absorbed. Stir in parsley and lemon juice.
