Helen S. Fletcher, owner of Truffes, the premier gourmet wholesale bakery in St. Louis for 23 years, is offering the secrets to her success in a seminar entitled, “Baking as a Business,” set for 9 a.m-5 p.m., Sunday, April 25 at the Crowne Plaza Hotel, Clayton. The seminar is geared toward those interested in starting or expanding a retail or wholesale baking business.
 In addition to Fletcher, the seminar will include guest speakers from the Small Business Administration and specialists in small business law, accounting and finance and image and website development and maintenance.
 “I’ve brought together all the people and much of the knowledge and contacts I had to develop on my own when I started my bakery,” Fletcher said. “Small businesses today can’t afford the trial and error method I used. They need knowledge and contacts now.”
 The seminar will cover topics including the benefits and risks of retail vs. wholesale, client development and management, supply sources, the key role of a website and social media, legal, insurance, licensing and inspection requirements and pitfalls, site selection and the enterprise zone, pricing strategies, packaging considerations, shortcuts to success and more.
 Truffes Bakery ( was primarily a wholesale bakery serving most of the large hotels, upscale restaurants and caterers in St. Louis. In addition, Truffes produced fancy wedding cakes for retail customers. Fletcher also operated a gourmet carryout location for nearly six years in University City. She retired from Truffes and closed the business in 2009.  She is presently teaching in the Baking and Pastry Arts program at St. Louis Community College at Forest Park and appears every Monday on KMOX-TV’s Great Day St. Louis.
