Warm flour rolled Tortillas with black bean relish
Easy for both the kids and the kids in all of us..
A great snack or a light entrée (can sub beef or pork or grilled veggies for the chicken)
Makes 6 rolled tortillas
Ingredients:
*2 8 oz chicken breasts grilled or sautéed, sliced thin.
*1/2 cup shredded white or yellow cheddar cheese
*6 six inch flour tortillas
*1/2 cup shredded lettuce
*1 cup of cooked and cooled black beans (if using canned, rinse well)
*1 lemon juiced
*1 lime juiced
*1/2 small red onion diced
*2 tomatoes diced
*hand full of fresh cilantro chopped
*1 cup sour cream
1. grill or sauté chicken breast till cooked through, slice thin and keep warm
2. juice the lemon & lime (watch for the seeds) & toss with the black beans, tomato
& red onion & a dash of salt & pepper, let the mixture sit for about 15 minutes
and toss in the chopped cilantro
3. warm the tortillas.. I like to use a skillet, but wrapping in a damp paper towel and
placing in a microwave for about 25 seconds is fine)
4. once tortillas are warmed, lay flat and divide chicken, cheese & lettuce between
each one. Roll them up and secure with a tooth pick or wooden skewer
5. serve with black bean relish & a dollop of sour cream
