7 ounces  whole eggs
8 ounces  granulated sugar
1/8 ounce  Vanilla Extract
1/8 ounce  salt
                        Stage #2
6 ounces  Vegetable Oil
1/4 ounce  Almond Emulsion
                        Stage #3
16 ounces  All Purpose Flour
1/4 ounce  Baking Powder
8 ounces  Pistachios

Stage #1
Scale into mixing bowl with paddle
Cream 1 minutes in 2nd speed

Stage #2
Add oil and emulsion, then cream 1 minute in 2nd speed

Stage #3:
Add and incorporate
Mix 1 minute in 2nd speed

Divide into two portions and spread into greased stollen pan  (5" x 12")

Bake @ 350 deg F in a convection oven for approximately 12 -15 minutes

Cool.  Remove from pan and slice into 1/2" pieces
Lay the pieces flat on a parchment lined pan to assure proper toasting.
Top with Crystal Sugar

Toast in cool oven (300F) for approximately 15 to 18 minutes

Mexican Tea Cookies, (Russian Tea), Small Batch

2 1/2 ounces  Ground Pecans,(Pecan Meal, Pecan flour)
4 ounces  Powdered Sugar
1 ounce  Regular Shortening
3 ounces  butter – softened
1/16 ounce  Salt
1/8 ounce  B & V Flavor
3 3/4 ounces  Bread Flour
5 3/4 ounces  Pastry Flour
                        Stage #2
2 fluid ounces  Whole Eggs

Stage #1
Scale all ingredients into bowl, mix in 1 st speed for 1 minute

Stage #2
Add and incorporate
Mix 1.5 minutes in 1 st speed

Divide into 1/2 ounce pieces. Round and deposit on a parchment lined baking pan
Note: This cookie does not spread, they can be placed close together

Bake in a 350 deg F. convection oven for approximately 8 minutes (Until the bottoms and edges begin to turn brown)

After baking allow cookies to partially cool.  While still warm roll in powdered sugar

Allow to thoroughly cool, and again roll (coat) whith powdered sugar

Oatmeal Chocolate Chip

6 ounces  Brown Sugar
1 1/2 ounces  glucose (corn syrup)
3 ounces  Regular Shortening
3 ounces  Butter
 3/8 teaspoon  Salt
1/4 ounce  Vanilla Crystals
                        Stage #2
2 3/4  ounces  Whole Eggs
1 1/4 fluid ounces  Buttermilk
6 ounces  Rolled Oats
                        Stage #3
6 1/2 ounces  Pastry Flour
1/2 teaspoon  baking soda
1/2  teaspoon  Cinnamon
                        Stage #4
9 ounces  Chocolate Chips
4 ounces  Walnut pieces

Stage #1
Scale and place ingredients in mixing bowl with paddle.
Incorporate, and cream in medium speed for 1.5 minutes

Stage #2
Slowly add whole eggs, scrape sides, add buttermilk and blend in low speed
Add rolled oats and mix 1 minute in low speed

Stage #3
Sift pastry flour, soda, and cinnamon. Add and blend

Stage #4
Add chocolate chips and walnut pieces

1.  Prepare 1/4 sheet pan by greasing the sides and cutting a parchment liner to fit, then lightly spray the liner
2.  Scale the cookie batter evenly to fit the pan
3.  Bake @ 350 deg F in a conventional oven for approximately 40 minutes
4.  Cool in pan
5.  Remove from pan and place on a cutting board
6.  Cut into 2 inch squares

Butter Cookies

8 1/4 ounces  Regular Shortening
8 1/4 ounces  Butter
3/8 ounce  salt
1/4 ounce  Vanilla Extract

2 1/2 ounces  Egg Whites
3 ounces  Evaporated Milk
                        Stage #3
4 3/4 ounces  Bread Flour
17 ounces  Pastry Flour

4 ounces  Jam, Any

Stage #1
Scale, and blend in mising bowl with paddle
in second speed for 2 minutes

Stage #2
Add eggwhites and evaporated milk
Blend in low speed for 1.5 minutes

Stage #3
Add flour and mix in medium speed for 2 minutes

Using a pastry bag and star tube, bag the cookies onto parchment lined full sheet baking pan, making 1/2 ounce rosettes
Top with a spot of jam bagged on through a small parchment bag.

Bake @ 350 deg F in a convection oven for approximately 8 -10 minutes or until the edges are turning light brown
Baking time will vary depending on size and number of units per pan, and spacing.
