We are a country that loves sausage, whether for breakfast, lunch or dinner. This version features turkey which reduces the fat content to practically nothing. However, turkey meat, especially all white meat can be dry. I would like to have half dark meat, half white turkey meat, but have found only white meat. So in order to overcome this problem, I use some grated apple to keep them moist. So get your peeler and grater out and you are on your way!
1 1/4 pounds ground turkey
1/2 medium apple, peeled and grated (about 1/3 cup)
1 tablespoons fennel seed
1/2 teaspoon dried oregano
1/2 teaspoon thyme
1/2 teaspoon hot red pepper flakes
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
1 1/2 teaspoons salt
2 tablespoons vegetable oil
Combine all but oil in a large bowl. Shape into 4 large patties or more small ones. Heat 2 tablespoons of vegetable oil in a frying pan just large enough to hold the patties without squashing them. Fry immediately for 18 to 20 minutes, turning halfway through. Drain on paper toweling and serve immediately.
To Make Ahead: Make the patties ahead, brown on both sides and freeze. To use; place in a 400 degree oven from the freezer for about 25 to 30 minutes.
