Bang Bang Chicken

 8--6oz portions

 1/4 cup white sesame seeds toasted
2 oz soy sauce 
1 1/2 oz sugar 
2 oz rice wine vinegar 
1 t sichuan peppercorns 
1 oz sesame oil 
2 oz chili oil 
2 # chicken breast 

1 Cook chicken breast, reserve to cool 
2 grind sesame seeds in a spice grinder 
3 add all ingredients together, creating a vinegrette
4 place chicken breast on a cutting board and gently pound breast flat
 the connective tissue will begin to separate
5 using two forks shread the chicken 
 For service: 
1 place a bilini on a plate 
2 place a small amount of the chicken on top of the bilini
3 drizzel a small amount of the sauce on top of the chicken
4 garnish with scallions & white and black sesame seeds
