Roasted Potato Salad

3 Roasted Red Potatoes, cold

1 Ounce Blue Cheese

1 Ounce Crispy Pancetta

¼ Teaspoon Mustard Seed

1 Ounce Green Onion Aioli

Smash the potatoes on the plate. Season with salt and pepper. Drizzle Green Onion Aioli and top with crumbled blue cheese, crispy pancetta and mustard seeds.

Green Onion Aioli

3 Cloves Garlic, Minced

½ Teaspoon Salt

Pinch Cayenne Pepper

¼ Cup Chives, Minced

1 Teaspoon Lemon Juice

2 Egg Yolks

1 Cup Extra Virgin Olive Oil

Combine garlic, salt, cayenne, chives, lemon juice and egg yolks in a small bowl. Whisk ingredients together until well combined. In a steady stream, add oil while whisking until sauce is thick and creamy.

**Alternative Method**

Combine garlic, salt, cayenne, chives, lemon juice and egg yolks in the bowl of a food processor or blender. With motor running, slowly add oil through top feed until sauce is thick and creamy.
