Oven Dried Tomatoes
Take full advantage of your oven time by drying large trays of tomatoes at one time. Oven dried tomatoes can be added to pasta, scrambled eggs or any sautéed vegetables; they are also delicious on salads, sandwiches, burgers and pizzas.
Extra Virgin Olive Oil
Your choice of herbs (good choices include thyme, basil, rosemary)
1. Cut tomatoes into ¼ wedges and toss with EVOO, salt, pepper and herbs.
2. Spread tomatoes, skin side down in one layer on a large baking sheet.
3. Dry tomatoes in a 275° oven for 1 ½ to 2 ½ hours, depending on size of tomatoes.
4. With your fingers pull off the skin of the tomato and discard before using or storing for future use.
