SUMMER SALAD WITH HONEY LIME SALAD DRESSING
Summer is made for salads – especially those with fruit and a good dressing.
This salad fits summer to a tee! Romaine, strawberries, toasted almonds and mandarin oranges are enhanced with a bright Honey Lime Dressing you will want to keep on hand.
I originally had this salad on an airline (which has since gone out of business) and made a nuisance of myself until they produced a second one for me. Those were the days when flying was fun and you kept your shoes on!!
Honey Lime Salad Dressing
1 cup mayonnaise
1/3 cup honey
2 limes, zested and juiced
1 teaspoon almond extract
1 teaspoon vinegar
Whisk all the ingredients together and refrigerate. May be made days ahead and will hold for 10 days in the refrigerator.
Yield: Approximately 1 1/3 cups
Sliced or slivered almonds
Mandarin Oranges, well drained
Honey Lime Salad Dressing, above
Toast the almonds in a 350 degree oven for 5 to 8 minutes until a medium brown.
In a large bowl combine the lettuce, sliced strawberries, mandarin oranges and almonds. Pour over as much dressing as desired. Toss. Serve immediately.
Note: Fold 1/2 cup sour cream, low fat if desired, into the dressing and it makes an ideal dip for fresh fruit.
