6oz Salmon Filets Poaching Liquid 1 cup dry white wine 1/2 cup water juice and zest from 1 lemon 1 TBLSP dijon mustard 1 bay leaf 1 TBLSP fresh dill, finely chopped 1/2 TBLSP fresh garlic, finely chopped Lemon Dill Compound Butter 4 TBLSP butter 2 TSP fresh dill, finely chopped Juice from 1/2 of a lemon 1/2 TSP fresh garlic, finely chopped Salt ansd pepper to taste Bring all ingredients to a very low simmer. DO NOT BOIL. Add salmon fillets and poach slowly for about 10 minutes. Finish with compound butter. Serve over roasted vegetables, rice or pasta.
