Date Night Dinner

Spiced Almonds
3 cups whole almonds
3 tablespoons fresh rosemary
½  teaspoon cayenne pepper
1 tablespoon dark brown sugar
1 teaspoon kosher salt
1 ½ tablespoon butter

1. Place almonds onto a large baking sheet.
2. Toast in a preheated 350?F oven until golden brown, about 10 minutes.
3. Remove from the oven and toss with the fresh rosemary, cayenne pepper, brown sugar, coarse salt, and the melted butter.

Grilled Chicken Cordon Bleu
Serves 4

4 boneless, skinless chicken breast halves, pounded thin
Olive oil
Salt and freshly ground black pepper
½ pound brie, thinly sliced
2 lemons, halved
4 - 8 slices prosciutto
¼ pound baby arugula

1. Heat outdoor grill or grill pan to high.
2. Brush cut side of lemons with olive oil
3. Brush chicken on both sides with olive oil and season with salt and pepper.
4. Grill until slightly charred on both sides and just cooked through. 
5. At the same time, grill lemons, cut side down. Grill until slightly charred.
6. Cover each chicken with sliced prosciutto. Place cheese on top.  Cover and heat just long enough for the cheese to melt.
7. Transfer chicken to serving plates. Top each with arugula and a sprinkle of olive oil. Serve with lemon to drizzle over the top.

Grilled Asparagus

1 pound asparagus spears
Olive oil
Kosher salt and freshly cracked pepper

Toss asparagus with olive oil, salt and pepper.  Grill over hot coals or hot grill pan, turning occasionally, until grill marks appear.

Fingerling Potatoes

1 pound fingerling potatoes
2 tablespoons butter
Kosher salt and freshly cracked pepper

1. Place potatoes in a saucepan and cover with cold water.
2. Bring the water to a boil, add salt to taste.  Reduce the heat to provide a gentle boil. Cook for about 10 minutes or until potatoes are soft when pierced with a fork.
3. Drain the potatoes. Add butter, salt and pepper and stir to coat.

Chocolate Covered Strawberries

12 large strawberries
12 ounces chocolate

1. Melt chocolate in the microwave or over a double boiler.
2. Wash the strawberries and dry thoroughly with paper towels.
3. Swirl the strawberries in the chocolate and place on a plate to cool.
