2 Beefsteak Tomatoes
1 Small Yellow Onion
1 Medium Green Pepper
3 Garlic Cloves
1 Large Cucumber (seeded not peeled)
3/4 Gallon of V8
1/4 Cup Extra Virgin Olive Oil
1/4 Red Wine Vinegar
1/4 Cup Lea & Perrins Worcestershire Sauce
1 Tablespoon of Kosher Salt
1 Teaspoon of Black Pepper
Rough chop all ingredients(Tomatoes, onion, green pepper, garlic cloves, and cucumber). Put tomatoes, green pepper, onion and garlic in food processor and pulse. (*Do not puree, and add 1 ingredient in at a time.)
In a large mixing bowl combine all ingredients and mix well. Refrigerate for at least 1 hour. Then enjoy on a hot summer day!
