1 cup each walnuts, almonds, and peanuts (toasted)
3/4 cup honey
3/4 tsp ground cayenne pepper
1/4 cup granulated sugar
1 tsp kosher salt
Heat honey and cayenne in a sauce pan until melted. Toss in nuts to coat. Spread nuts on a sheet pan and bake for 10 minutes at 325 degrees.
In a large bowl toss glazed nuts in sugar and salt. Spread on parchment to cool.
- Use a mixture of your favorite nuts or just one kind. Pecans are great in this glaze!
- Change up the spices. If you don't like it as spicy, cut back on the cayenne or just leave it out. Try adding cinnamon to this recipe. For something for complex look for spice mixes like curry or chinese five-spice.
This year we saved our seeds from carving pumpkins and glazed them with another variation. We dried the seeds out in a low oven for about an hour, then coated them in the honey & cayenne mixture, but also added cinnamon, ground cumin and ground ginger. Finishing with sugar and salt. They were so good.
I've also given these nuts as gifts just by lining a small metal tins with parchment and tying a bow around the outside. They could also be packaged in cellophane bags.
