Frozen Almond and Chocolate Cupcakes

Prep time: 20 minutes
Freezing time: 2 hours

Preparation:  What you need

Base: (yields 12 servings)
4 cups fat free frozen vanilla yogurt, softened
½ cup ground or slivered almonds
½ cup chocolate grated

Frosting: (yields 24 servings)
1 ½ cup plain fat free Greek yogurt
1 ½ cups semi-sweet chocolate chips

Line a 12 muffin pan with foil or silicone muffin cups and set aside.

In a bowl, combine frozen yogurt with ground almonds and grated chocolate.  Fill muffin cups with frozen yogurt mixture using an ice cream scoop and freeze for two hours.

Frosting Instructions:
Measure out the yogurt and let sit at room temperature or until the yogurt has softened.  Melt chocolate in the top of a double broiler or in microwave.  Cool the chocolate at room temperature, and then fold in yogurt 1/4th of a cup at a time until the mixture is smooth.  Let stand at room temperature until cool and spreadable.
