Individual Egg Frittatas

Non-stick cooking spray (Pam)
1 lb Breakfast Sausage, cooked
1 Bell Pepper, chopped
1/2 Vidalia Onion, chopped
10 Eggs
2/3 cup Half and Half
1 tsp Northwoods Fire Seasoning (Penzy's Spices)
Salt and Pepper to taste
1 cup cup Sharp Cheese, shredded

Coat a regular size muffin tin well with a non-stick cooking spray. Preheat
oven to 375 degrees.

Sauté sausage over medium-high heat until it crumbles and is no longer pink. Remove sausage from pan with a slotted spoon. Sauté bell pepper and onion in sausage grease until translucent, about 3-4 minutes. Remove vegetables with a slotted spoon and add to sausage.

In a large bowl, whisk eggs. Add half and half and seasoning. Mix in half of
shredded cheese.

Spoon sausage, peppers and onions into the bottom of each muffin tin cup.Pour egg mixture ¾ of the way full. Top each egg cup with remaining cheese. Bake for 20-23 minutes until puffy and golden.

Remove from oven and take a knife around the edges of cup to pop frittatas out. Serve immediately.
