Matt's Missouri Mix

-Can be used for lots of things... cornbread, pizza crust, muffins... COFFEE CAKE!
*9 cups all purpose flour
*1/3 cup baking powder
*1 cup plus 2 T non-fat dry milk
*4 t salt
*1 & 3/4 cup vegetable shortening (like Crisco)
Combine dry ingredients until well mixed.
Cut in shortening until mixture is consistency of corn meal.
*2 cups Missouri Mix
*1/3 cup sugar
*1 egg
*1/2 cup water
Combine and stir until well mixed (about 25 strokes -- do not beat).
Place 1/2 batter into 8x8" greased dish.
Make topping
*1/2 cup sugar
*2 T Missouri Mix
*1 t cinnamon
*3 T butter or margarine
Mix dry ingredients together.
Cut butter into mix until consistency is like corn meal.
Put 1/2 topping mix on top of 1/2 batter already in 8x8" dish.
Pour on rest of batter.
Top with remaining half of topping.
Bake at 375 degrees for about 20 minutes.
