Chili Oil Vinaigrette & Coffee Spice Rub

Chili Oil  Vinaigrette
¼ c                red wine vinegar
¼ c                rice wine vinegar
1 T                Dijon mustard, smooth
2 each             shallots, minced
1 teaspoon         oregano, dried
½ teaspoon         red pepper flakes
1 Tablespoon       kosher salt
2 teaspoons        black pepper
1 teaspoon         granulated sugar
¾ c                olive oil
¾ c                vegetable oil
2 T                chili oil

Combine the red wine vinegar, Dijon mustard, shallots, oregano, salt and
pepper in a
large container.  Stream the blended oils into the vinegar mixture while
emulsifying with an immersion blender.  Allow to sit for 5 minutes.
Re-emulsify if necessary.
Taste and adjust seasoning as needed.

Coffee Spice Rub

2 Tablespoons                    freshly ground coffee beans
1 Tablespoon                     brown sugar
1 Tablespoon                     freshly ground pepper
2 teaspoons                      kosher salt
1 teaspoon                       Ancho chile powder
1 teaspoon                       dried oregano OR 2 T fresh oregano, minced
½ teaspoon                       smoked Spanish paprika
¼ teaspoon                       ground cumin
¼ teaspoon                       ground allspice

Mix all ingredients together with a food processor or a whisk.  Store in a
plastic container or ziploc bag until use.
