Scrambled Eggs with your choice of Greens, Cheese & Fresh Herbs
1-2 tsp butter
1 tbl spoon milk
2 handfulls of greens (spinach, chard, sprouts, or kale)
2-3 tbl spoons of cheese (goat, cheddar, swiss, or mozzerella)
1 tbl spoon fresh herbs (chives, basil, thyme or other) Salt and Pepper to taste
Whisk eggs, milk, herbs and semi-soft/hard cheeses (if using) together in a bowl. Set aside. Add butter to skillet on medium low heat. Once melted add greens to skillet and sautee until they reduce in size by about two thirds. Add whisked egg mixture and scramble. If using goat cheese or other soft cheese, add this towards the end until melted. Serve with salt and pepper to taste.
note: for a crunchier/fresh vegetable taste add greens to whisked egg mixture at the beginning.
