Butternut Squash Pear Soup

Serves 2-4

8 cups butternut squash,cubed
1 medium onion,chopped
2 ripe pears,chopped
2 tbsp fresh ginger,chopped
6 tbsp butter
1 cup apple juice
6 cup chicken broth
1/3 cups maple syrup
2 bay leaves
2 thyme sprigs
1 tsp cinnamon
1 tsp nutmeg
½ tsp cloves
½ tsp pepper
2 cups milk
Salt to taste

Melt butter in a large saucepan, add onion, sauté until translucent. Stir in ginger and pears, cook until soft. Add butternut squash and cook for 5 min, add the rest of the ingredients except milk, cover and simmer for 45 min. Stir in milk and simmer for 5 min longer. Turn off heat and puree the soup by using immersion blender or transfer to a regular blender.
