Homemade Tomato Ketchup

2 lbs ripe tomatoes, peeled and chopped
1 medium onion, chopped
4 garlic cloves, chopped
¼ tsp cinnamon
¼ tsp ground allspice
¼ tsp ground cloves
¼ tsp ground mace
½ c. packed light brown sugar
½ c. cider vinegar
Salt to taste

Preparation
Combine tomatoes, onion, and garlic in a large saucepan, simmer over med heat, stirring occasionally and cook until soft. Stir in the rest of ingredients and bring to a boil. Lower heat and simmer, uncovered, stirring occasionally, until very thick, 45 to 55 minutes (stir more frequently toward end of cooking to prevent scorching).
Purée ketchup in blender until smooth (use caution when blending hot liquids). Chill at least 2 hours (for flavors to develop).
