Recipe: Tomato Bruschetta Stack

 Tomato Bruschetta Stack:

Ingredients:

4-Large Tomato's, Thick slices

1-Ball Mozzarella, Sliced Thin

 

Pesto Sauce:

1/2-cup pine nuts

1/2-cup parmesan

1/2-cup Extra Virgin Olive Oil

1-bunch 20 leaves basil

2-cloves garlic

Salt

Pepper

Directions:

Blend all ingredients in a blender till smooth.

 

Bruschetta Mix:

6-roma tomatoes, diced

1-tablespoon balsamic vinegar

1/4- cup extra virgin olive oil

2-cloves garlic, minced

1-jar sun dried tomatoes (California Sun-Dry)

Salt

Pepper

Directions:

Place all ingredients into a bowl and mix well.

 

Directions:

Preheat oven to 450.  Then place tomato slices on the cookie sheet lightly salt and pepper.  Then begin to build 1 tablespoon pesto, 1 tablespoon bruschetta mix, 1 slice of cheese then 1 slice of tomato.  Repeat this process with the other slices.  Place into the oven for 5-8 minutes.
