Beef- Butternut squash curry

 

2  (14 oz).    can coconut milk

2-4 Tbsp      red curry paste

1.5 lb           top sirloin, cubed into 1 ½ “ or stew meat

3 c.               butternut squash, cubed into 1 ½”

1/3  c.           fish sauce

¼  c.             sugar

1 c.               basil leaves

Cooked  Jasmine rice

 

Heat coconut milk in a large saucepan over med hi heat until bubbly. Stir in curry paste. Add beef, squash, fish sauce and sugar, mix well and cover. Bring to back to a boil then turn heat down to low, simmer until beef is tender and squash is done about 1 hr. Turn off heat and stir in basil leaves. Serve over rice.

Serving: 2-4 people
