Baked Oatmeal Breakfast Cookie

Baked Oatmeal Breakfast Cookie
1 ¾ Cup quick cooking rolled, Irish or steel cut oats
¼ -Cup raw (unrefined) cane sugar
¼ Cup melted butter
1 egg
½ Cup milk
1 Granny Smith apple, diced
Dash of salt
1 tsp pure vanilla extract
1 tsp cinnamon
Optional:  Warm milk, maple syrup, honey, and fresh or frozen berries for toppings.
Preheat oven to 350 degrees.  Grease 11x7 baking dish.  In a medium mixing bowl, combine oats, sugar, butter, egg, milk, salt, vanilla and cinnamon.  Fold in diced apple.  Bake for 20-25 minutes until lightly browned along the edges.   Remove from oven.  Cut into squares and serve immediately in bowls.  If desired, top with warm milk, a drizzle of maple syrup or honey, cinnamon and fresh berries.
This recipe can be prepared ahead of time and simply reheated in the morning.  Just add the milk and heat on medium power in the microwave so it doesn’t dry out.  You can substitute honey for raw cane sugar.  If you do, add a little less milk and cook at 325 degrees to avoid over-browning. 
Yield:  4-6 servings
