One of St. Louis' most innovative chefs has taken over the burners at Monarch.

Josh Galliano cooks with local ingredients as much as possible, but this is not your typical farm-to-table fare.

Salads are made elegant at Monarch -- here Goatsbeard Farm goat cheese is made into a mousse and then paired with beets and pea shoots.

And the winter squash chowder is served with pumpkin seed oil, duck cracklings and a seared duck breast.

Steak tartare is utterly simple, the raw beef paired with preserved Meyer lemon, capers and sea salt. And here josh spices tuna with espelette.

And be sure to finish your meal with one of Monarch's desserts, like the caramelized apple parfait.
