St. Louis (KMOV) -- This week, Sauce Magazine Editor Catherine Neville shows how a local chef simplifies his Italian food at Onesto Pizza and Trattoria in south St. Louis City.

Chef Vito Racanelli Jr. serves an authentically-simple Italian fare that is directly reflective of his upbringing.

His mother cooked extensively in his youth, and she stayed true to her Italian heritage in the kitchen.

Onesto's Pizza is worth the trip alone, but customers are encouraged to take time to sample some of the more unique items on the menu, such as the Epi Roll, the Riff on a Stomboi, or the Arancini, a huge rice ball stuffed with peas and Bolognese.

Another must-try is the fettuccini alfredo. The sauce on this simple, rich dish is perfectly creamy, not heavy, with a shot of nutmeg. And in traditional style, the sauce is thickened with raw egg yolk at the table.
